INFO FROM OUR ONLINE RAW COURSE

The following is from our online raw certification course.

“When we overeat we overtax our body and it must spend more time processing and digesting food, healing overtaxed organs, and eliminating the waste products generated through digestion. Because of this extra work, the body is less efficient in doing its more important work of nutrient assimilation.”

FOOD FOR THOUGHT

What’s in your food? Today, food manufacturers are using food additives for preservatives, to replace nutrients lost in processing, to increase shelf life and improve taste that processing destroyed. Replacing the nutrients doesn’t fix the problem, it only adds to it. When God created raw foods, He created them with all the trace nutrients in perfect balance, and man can never do as well.

Let’s take a look at some of the food additives man has added to processed foods which are accepted by government standards.

Acids: to preserve and to improve a sharper flavor.

Anticaking agents: keeps powdered substances from caking.

Food Coloring: to replace color lost so food looks more food attractive.

Emulsifiers: used in mayonnaise, homogenized milk and ice cream to keep oils and water mixed.

Flavors and flavor enhancers: both natural and artificial. Humectants: to prevent drying out.

Tracer gas: to increase shelf life.

Hormones and antibiotics: in meat and dairy.

Irradiation is an improved method of preservation.

Pesticides: on produce and in meat.

Preservatives: to inhibit spoilage from bacteria, microorganisms and fungi.

Sweeteners such as sugar and aspartame: for flavor.

There are also 'indirect food additives' like sanitizing agents used on the processing equipment,

Fresh fruits and vegetables provide wholesome nutrients in a ready to eat package. And organic is even more so. Organic fresh fruits and vegetables are awesome foods. Fit these into your meals and enjoy the benefits of healthy eating.

Hello, my name is Leah. I’ve been on and off of this raw food journey for close to 10 years but decided to make it a lifestyle about 5 years ago. I have children who have also been troopers. My old job had us traveling around the US for a couple of years living out of hotels, so I got to know the benefits of eating fresh foods from different areas, but then we also got the pleasure of rinsing huge juicers and blenders out in tiny hotel sinks. NOT luxurious!

Right now I live near Seattle and I’m going to school for natural health and nutrition. I love playing in the kitchen with all sorts of different foods. One of my favorite things to do is try to come up with new recipes. Although there have definitely been struggles, it’s good to know that there are certain foods that can curb our cravings and nutrients that help ease food addictions making it easier to heal. As for me, I had to heal my body with the raw alkaline diet, a couple of times. I kept going back to eating Oreo’s and Lucky Charms because I didn’t know that getting rid of food addictions takes more time and detoxing. I don’t believe we ever stop learning and that’s why we all need each other to grow.

It's a lonely raw food life when we're by ourselves in this big S.A.D. diet world. Let's face it. Right now we're the minority, but hopefully not for long when we all come together... and grow and GROW until...... Mmuuuahahaha...WE TAKE OVER THE WORLD!!! Ok, just kidding. (Been hanging out with my kids too much). But we do need to encourage each other.  We have been living in society on a S.A.D. diet our whole lives and the transition to health and healthy eating cannot be done overnight. It takes time, care, encouragement, good recipe ideas, and fun. Speaking of fun, I also have a big heart for kids’ recipes. I have a very picky child so I use him as my taste tester.

FAVORITE RECIPES

Leah Cox

Seatac, WA

My favorite recipes are the easy ones. One is raw hummus. I dip veggies or sprouted crackers in it. I also absolutely love making fruit custard pies. Different kinds of pies are a great experiment project. The kids really like this one too. Then there’s the world of yummy shakes and smoothies. The list doesn’t end. I think I want to go make one now!

Raw Hummus

3 Tbsp olive oil

2 Tbsp chopped fresh parsley

2 cups chick peas (garbanzo beans) soaked or sprouted

Salt to taste

3 Tbsp tahini

4 cloves garlic, sliced (I like lots of garlic)

¼ cup fresh lemon juice

Mix all ingredients in blender until it forms a smooth and rich consistency. Serve with a variety of vegetables, such as carrot.

Carob Pudding

2 bananas

1 avocado

Half a cup of carob powder (hopefully raw)

Blend all ingredients until smooth
