 IN THE GARDEN

 

**Although spring is in the air, nighttime temperatures in some places may not be warm enough for planting certain plants or for moving plants from the warmth of indoors to an outdoor area.

 

**This is the time to shop for perennial blooming flowers such as daylilies. They come in many colors and sizes and add to any floral landscape.

 

**This is the time to add dill and basil to your herb garden or containers. They can be grown from seeds or transplants.

 FOOD FOR THOUGHT

 

An Apple a Day

The old saying that “an apple a day keeps the doctor away” just may be correct. Studies show that apples fight viruses, lower LDL (bad cholesterol) and high blood pressure stabilizes blood sugar (important for controlling diabetes), regulates bowel function, prevents tooth decay, suppresses the appetitive without robbing the body of necessary nutrients (helpful for those trying to lose weight) and helps stop the growth of cancer cells.

 

Strawberries

Although strawberries are available in the store all year long, May is the best time for fresh strawberries. They are great in dishes at breakfast, lunch and dinner, along with for a snack. Add them to a green salad along with avocado, celery, leeks or red onions and chopped raw nuts.

 

 

Honey

Honey is one of those controversial foods when it comes to veganism. Some feel it is an animal byproduct and avoid consuming it, while others do not.  Whether you choose to eat honey or not is up to you, but there are many things you can use it for. Do you know honey has medicinal uses? The ancient Egyptians had about 900 treatments for a wide variety of illnesses and injuries, with more than 500 of them using honey as a primary ingredient. The Greeks and Romans knew that rubbing honey into wounds helped the healing process. Today, international travelers often take honey with them on trips-it seems to work when nothing else stops diarrhea. It may also be effective in combating pathogenic bacteria that can cause food poisoning.

I grew up as a typical American child in the 1980s. My parents rarely fed me fast food and I was physically active, but my intake of soda and processed foods wreaked havoc on my blood glucose levels. Once I hit my teenage years, I began to have migraines and endured several hypoglycemic episodes (including fainting). I had several medical tests done but since I was thin, doctors told me I just needed to eat more.

After high school, I became less active and slowly started to gain weight. After acquiring back pain and an overall sluggish feeling in my mid-20s, I decided enough was enough and began to obsessively study nutrition and try many "healthy" diets. Eventually, I took the plunge and decided to eliminate all animal products from my diet.

Switching to a plant-based diet immediately gave me energy, eliminated my hypoglycemic symptoms and migraines, and soon eliminated my excess weight. After discovering the science behind living foods, I became a true believer and have been reaping the benefits ever since.

I'm fascinated by the profound effect food has on the mind, body and spirit. Many people assume raw food diets are too restrictive, but I've never experienced more variety from any other diet. Eating exclusively raw foods may not be for everyone (my diet ranges between 75%-100% raw), but eating even as little as 50% raw foods is easy to do and will improve your health immensely.

I realize the challenges of today's hectic lifestyle and provide flexible coaching tailored for each individual. I enjoy helping others address specific health concerns and developing personalized diet programs including weight loss plans. I'm passionate about travel and enjoy creating regional and international versions of raw food meals. I'm also an advocate of natural skin and body care, an added benefit to the raw lifestyle. I'm currently available for email/phone consultations and raw food preparation classes.

I'm a certified Raw Food Lifestyle Coach, Raw Food Nutrition Specialist, Raw Food Chef and Raw Food Personal Trainer. I hold a B.A. in Journalism and Public Relations with a minor in Holistic Health and Wellness Education.  FAVORITE RECIPES

Breakfast Parfait
1 banana
1/2 cup blueberries
1/2 cup strawberries
1 tsp slivered raw almonds
Mush the banana into a pudding with a fork. Stir in the berries and top with the slivered almonds. Voila! Breakfast is done. (I like to replace the berries with frozen tropical fruit and the almonds with macadamia nuts for a summertime treat.)

Mamma Mia Marinara
1/2 cup sprouted lentils
1/2 cup pureed tomatoes (for sauce)
1/2 cup chopped broccoli
1/3 cup chopped tomatoes
1/4 cup chopped zucchini
Stir together and top with 1 tsp extra virgin olive oil and lots of fresh oregano.
Dessert: 1 cup red grapes

High Desert Exfoliator
This recipe is simple and works great in dry climates like here in the Rocky Mountains.
2 cups raw cane sugar (or salt if you're skin is not sensitive)
1 cup olive or coconut oil
A few drops of essential oil (I use lavender at night and lemon in the a.m.)
Mix together in a container and massage into body in a circular motion in the bath or shower. The sugar and dead skin cells will rinse off and the oil will leave you with the softest, shiniest skin.
