necessarily work for another. When you start moving towards a raw foods diet you
become increasingly aware of your body’s signals which tell you what foods agree
with you and don’t agree with you, and what foods you really crave”.

FOOD FOR THOUGHT
Our bodies are designed to live up to 120 years, yet millions of people are dying young. And those of us in the Western world are not exempt. In spite of all the advanced methods of lifesaving, cancer and infectious diseases are major killers, with heart and circulatory diseases staying at the top of the list. So why is this still such a problem? Do you think it is diet connected?
A poor diet generates illness, and is the primary cause of Alzheimer’s disease, arthritis, cancer, heart attacks and disease, high blood pressure, diabetes and strokes along with other “modern diseases”. Modern medicine wants us to accept there is no cure for the majority of diseases, and the only thing to be done is to “treat the symptoms” with surgeries and medications. They feel diet and nutrition play no consequential role.
Doctors show their “ability to cure” by removing the diseased organ or prescribing drugs (usually more than one at a time). No mention is made to patients that there are non-surgical methods or diet having anything to do with the problem. They also usually leave out the “side effects” from the drugs and surgeries.
Deal with the symptoms only and you will die prematurely. Pursue the cause of whatever your condition is, and you will feel better. Eat a healthy diet and you will see improvement. Ingest only food and drinks that will nourish the body and it will run better. Avoid consuming anything that is dangerous to the body. You are the one who selects what you eat. Eating right is just as simple as eating wrong. Food is your fuel, so use premium fuel only. Take command of your eating habits by treating yourself to healthy, nutritious and flavorsome foods. Even if you have a disease with a poor prognosis, don’t give up. Don’t give in to the harmful habits that got you there. Alter those habits and give yourself an opportunity to heal. The quality and length of life rests upon the choices you make. So choose life, not death.

I left the corporate world and began my culinary career in 2001, as a personal chef preparing delicious and healthy meals for clients. Unfortunately tragedy hit in the worse way…I lost my younger brother to obesity. Karl was 45 years old and left three children, a wife, and his siblings. I have heard people say for years that obesity is genetic, and of course that’s not true it’s what we put in our mouth! As a Southerner, I know that many are unwilling to give up those foods that we were raised on, even though they are toxic! A lifestyle change had to happen because diets don’t work and when you take the “t” off all that’s left is the word die. And during my research I discovered raw foods. I knew this process had to begin with me because I didn’t want another family dealing with that unnecessary heartbreak.
Having dealt with high cholesterol, migraines, arthritis, and weight fluctuation, I made raw foods a standard of living and went through an amazing transformation. I lost over 40 pounds and now as a size 6, instead of 12/14 and I haven’t looked back. I will be 59 this year and I have more energy than I did in my 20s and 30s and have done amazing things that I never thought I could. Family and friends have received the message and are making lifestyle changes.
Since I began coaching and teaching the raw food lifestyle I have never been so fulfilled. My greatest success story is from a client that had a kidney transplant two years ago and had gained a lot of weight because of the steroids she was taking. She contacted me about raw foods and losing weight. After we talked, she contacted her doctor and was given the go ahead to start the program. Long story short, she lost weight and her doctor took her off one of the steroids she was taking. Her doctor was very easy to work with and also encouraged her during the month she was on the program. She is still eating raw foods and looks marvelous.
I am teaching raw food classes at the North Georgia Homeschool Enrichment; and I am also an ongoing participant in various health seminars at local schools.
My goal is to coach others dealing with weight problems, food-related health problems; and to teach raw chefs to prepare delicious raw and living foods that not only satisfy the palate, but nourish the body.

Green Smoothie
1 frozen banana
1 apple (or pear, orange, peach, orange, strawberries, blueberries, etc.)
1 teaspoon freshly grated ginger
1 Tablespoon flax seed or flax seed oil
1 1/2 cups dinosaur kale (or spinach, romaine lettuce, celery)
1 Tablespoon Hemp protein powder
20 ounces water
Blend all ingredients in Vitamix until smooth.
Mango Citrus Dressing
1 mango,
peeled and seeded
1 teaspoon lemon juice
1 small clove garlic
2 Tablespoons unfiltered extra virgin olive oil
1 Tablespoon sesame seeds
1/2 teaspoon Celtic sea salt
1/2 cup fresh orange juice
1 Tablespoon agave nectar, optional
Place all ingredients in a blender and puree.
