QUESTIONS AND COMMENTS
I enjoyed your news letter as always. I would like your opinion on organic soy milk. I hear it is healthy and the next person says it isn't. This is very confusing. I like it in my smoothies.
Could you give some advice on this? Should I replace it with nut milks as I love my smoothies creamy? God Bless, Mary
Hi Mary--it is always great to receive your encouraging emails. As for your questions on soy here are a couple sites to check out. Nut milks are a better choice. I have fruit smoothies for breakfast every morning, but I only use fruit and hemp seeds. If I wanted it creamier, I probably would make my own nut milk and use it.

Heating Our Food

All nutrients are heat sensitive. Proteins are denatured at 160 degrees of heat. Fats are not usable by our bodies when heated as they form trans-fatty acids which we can't break down. When carbohydrates are heated they form carcinogens and toxins such as acrylamide, which has been shown to cause cancer in scientific experiments. And enzymes are the most heat-sensitive nutrients. They are destroyed by heat over 115 degrees.

Barbequed Foods
When meat is barbequed, the fat that drips into the fire is changed by the heat into benzopyrene, which is a potent carcinogen. This chemical then rises in the smoke and coats the surface of the meat, which is then eaten. In the intestine these substances are smeared against the bowl wall hour after hour.
Colon cancer is epidemic in countries where large amounts of meat are eaten, and extremely rare in long-time Vegans (those who eat no animal products). Ridding ones diet of meat, and changing it to a Vegan style diet greatly reduces one’s risk of developing intestinal cancer.

The body has been a source of discomfort for me during many phases of my life. I tend to get ill when I am under stress. When I was nine years old I was in the hospital for two months with a bone infection. They were not sure what I had and did some exploratory surgery. I was lucky to be able to keep my leg. Interesting enough I chose a field that incorporates healthy practices. I teach aerobics, yoga and am a personal trainer.
In 1993 I attended a P.A.I.R.S. training which was co-led by Dr. Greggory Haag. At the time I knew nothing of the raw food lifestyle. I found it interesting to hear about the fast that Dr. Haag was doing at the time and had many questions about the healing of illness through foods. I was not totally prepared for what I was about to experience. As a child and every year in adulthood I would get Strep throat which I would take antibiotics for and it generally lasted for two weeks. When I got my yearly strep throat I decided to call Dr. Haag to ask some advice before giving in to the drugs. I was overall a healthy person. ..so the idea of healing with raw food seemed attractive to me. Per his advice, I took only whole raw fruits for one day and then drank juices for the next three days. I could not believe that the symptoms went away so quickly…and no doctors bills to pay!!!!
I was hooked. I also had an ongoing problem with shingles (a skin disorder). I decided to do an experiment of my own. When the onset of those horrible little blisters arose I stopped eating and drank my meals. Again, I got amazing results within three days whereas it usually took a couple of weeks for it to go away.
Dr. Haag practices Natural Hygiene. My new lifestyle did not include dehydrated foods . Gradually over a couple of years I became a raw woman.
It wasn’t until the late nineties that the raw food movement became popular with all the packaged and dehydrated foods. I still eat my foods in their whole raw form or blended. The dehydrated foods I will eat when at a gathering or raw function. My philosophies have changed over the years with my age and experience. I believe that we have the power to heal ourselves holistically. It is not necessary, if we can make the necessary changes, to undergo surgery. Listening to the body is necessary. Its’ wisdom is astounding. This life is too precious to live blindly.

FAVORITE RECIPES

My daughter and I have a sweet tooth and love to create sweets during the long summer months in Austin, Texas. Here are a few of our favorites.
Raw Chocolate Smoothie
9 Brazil nuts
2 c. water / or half ice
1 T. raw cacao
2 T. raw carob powder
1 c. strawberries or mixed berries
1-2 T. agave nectar or honey (raw)
Papaya Ice Cream
1/2 large papaya
1/2 large avocado
vanilla
agave nectar
salt
blend all together and freeze!!!
Mint Fudge
1/4 c. almond butter
1/4 c. almond pulp
2 T. coconut oil
1/4 c. cacao nibs
1/4 c. carob powder
agave nectar
salt
mint oil
vanilla
chopped almonds
Grind cacao until powder, add carob & pulse to blend. Add butter ,
pulp, agave, vanilla , mint, and coconut oil. Knead ingredients until thoroughly
blended. Place in fridge.
READER’S FAVORITE RECIPE
Chilled Raw Choc. Fudge **from www.greenchefs.tv**
1/2 c. carob powder
1c. almond butter
4 T. coconut butter
1/2 c. honey
1 tsp. vanilla
1/4 tsp. sea salt
Use Food Proc. blend till smooth. Place in glass square pan and freeze for 1 hour.
Yummy!!!

Onion Bread **from a friend in TN**
2 1/2 lbs of sweet onion, peeled
1 c. ground sunflower seeds
1 c. ground golden flax seeds
1/2 c. olive oil
3 oz. Nama Shoyu
Put onions in food proc. and process until small pieces, not mushy.
Put in mixing bowl and add other ingredients and mix thoroughly.
The flax will absorb the liquid. Smooth onto teflex sheets about 1/4" thick.
Place in dehydrator for 5 hours, turning over for another 3-4 hours or until dry and crispy.
Either break up or cut with a pizza cutter and store in frig.
Really Great!

Coconut Shake **adapted from Sad To Raw**
2 c. water
1/2 c. almonds
1 - 2 T. honey
Blend till smooth.
Then add:
1 baby young thai coconut water and meat
2 tsp. vanilla extract
3 - 4 T. maple syrup
1 - 2 T. cinnamon
8 ice cubes
Blend well!
Makes 2 large servings!
