*** Natasha Kyssa of SimplyRaw is proud to present Ottawa's first annual raw vegan pie contest, Saturday September 9, 2006. Calling all raw food enthusiasts - put on your creative hats and prepare (in advance) a pie from fresh fruits, vegetables, nuts, seeds, grains.
She is organizing this as a non-profit event, to promote healthier raw vegan lifestyles in our community. To help involve a wider community of participants, and broaden the exposure of raw veganism as a healthy lifestyle option, she will be joined by an esteemed panel of judges, including: Leanne Cusack (CTV News host), Louise Crosby (Ottawa Citizen Columnist), Jim Watson (Minister of Health Promotion, Ontario), and Robert Fife (CTV Ottawa Bureau Chief). The event will be emceed by Brigitte Gall (actor & star of Me My House & I).

Alternative Medicine

Modern Medicine, also known as Allopathic Medicine, is a very new discipline, unique to the 20th century and to western societies. A hundred years ago, people depended mostly on alternative or traditional systems of healing, as does most of the world’s population today. According to the World Health Organization, it is estimated that between 65 and 80 percent of the world’s population depends on traditional medicine as their primary form of health care. The WHO also states that when traditional medicine treatments are introduced into Western culture, they are viewed as alternative or complimentary treatments.
Alternative medicine is composed of nutritional counseling, acupuncture, acupressure, aromatherapy, chiropractic care, Chinese medicine, colon therapy, homeopathy and herbs, , iridology, magnetic therapy, massage, nutritional glandular therapy, reflexology, to name a few. They are all active forms of medicine that consider the source of the problem, increase the immune system and assist to strengthen the body’s own healing mechanisms.
The following are some interesting facts you may want to become accustom with.
*Many alternative approaches have been scientifically proven to be less invasive, less dangerous, more effective and more economical than conventional medicine.
*Worldwide, 50 to 90 percent of the people use alternative medicine where only 10 to 30 percent of people use conventional medicine.
*Traditional Chinese medicine has been chosen by the World Health Organization for worldwide propagation to meet the health care needs of the 21st century.
*Mutual of Omaha insurance company says it saves about $6.50 for every dollar it spends covering nonstandard (alternative) treatments.
*The U.S. Government sponsors the use of acupuncture in drug rehabilitation programs.
*There are five homeopathic hospitals in Great Britain run by the British National Service.
*One out of three drugs prescribed in Germany is an herb.
What are some of the alternative therapies? The following is a partial list of some alternative therapies used worldwide.
Acupuncture: implanting fine needles into particular areas in the body as a treatment for many health conditions. It has been used in China for thousands of years and in Western Europe for several hundred years.
Acupressure: is a type of acupuncture, but instead of implanting needles into particular areas on the body, manual pressure on the points is used to achieve the same results. Aromatherapy: is a gentle, non-toxic, effective tool for healing. It is built on the healing properties of essential oils pulled from herbs, flowers, grass, and barks which are applied topically, diffused into the air or otherwise used therapeutically.
Chelation Therapy: is the most commonly used conventional treatment for removing lead and other toxic metal poisoning. It is an increasingly popular alternative therapy for treatment of cardiovascular disease, particularly atherosclerosis. It is attainable in oral or intravenous form.
Chiropractic: Chiropractors perform on the belief that the improper alignment of the vertebrae (the bones that make up the spinal column) and the spinal cord they protect, is the cause of malady and disorders. Chiropractors apply pressure in a particular way to permit the body to realign the vertebrae in the spinal column.
Colon Therapy: also called colon hydrotherapy or colon irrigation, purifies and detoxifies the large intestines by irrigation it with purified water. Vitamins, herbs, helpful bacteria, or oxygen also may be added to the water.
Herbal Medicine: is used by an estimated 80% of the world’s population, particularly in Europe, Asia and India. Drug companies still use the natural plant world as a source of many of its pharmaceutical inspirations. Seventy-seven percent of the 150 most often prescribed drugs are of plant origin. Herbal remedies may be as simple as consuming a whole herb for medicinal purposes or may be made as teas, infusions, capsules, salves, tinctures, compresses and decoctions.
Homeopathy: is based on the principal of similars. It is an immeasurable dose of a substance that can heal the symptoms caused by a larger amount of the same substance. There has been much research and trials with homeopathic remedies, which are used all over the world today.
Iridology: is the practice of looking at the fiber, color, texture and pattern in the iris of the eye to establish whether a person is showing any inflammation, stress or deep-seated weakness in the overall body constitution.
Massage Therapy: is the manual technique to execute or prolong health and well-being. It includes a wide variety of modes based on methods that have been used for thousands of years.
Naturopathic Medicine: is renewing overall health instead of suppressing a few key symptoms. Practitioners seek to find the fundamental cause of a condition and apply an assortment of treatments that are designed to work with the body’s natural healing mechanisms. The fundamentals of healing for the naturopathic physician are: do not harm; nature heals; find the cause; treat the whole person; prevent illness and doctor as teacher. This approach can be summed up with, “what you eat and drink today, walks and talks tomorrow”.
Reflexology: is an ancient Oriental method where the whole body is imaged in the hands, feet and ears. With firm fingertip pressure application to the hands, feet and ears, the energy pathways are unblocked and the body’s symptomatology resolves.

My journey to becoming a raw food “junkie: actually began many years ago when my son, who is now 28, was a baby. I had gone to a doctor with him for a check-up, and was told to give him milk, since he was thin and I was no longer nursing. In those days, back in 1978, I was somehow led to believe that doctors were akin to the Almighty. To make a long story short, I unfortunately listened, and he became sick with a runny noise, eys, and severe ongoing ear infections. After a number of months of antibiotics, and incessant sleep interruptions, numerous doctor visits just short of installing ear tubes, we had had enough! I had been doing some independent reading and took him off of the dairy on my own. I also had found a soy based formula, which worked, albeit far from being healthy. That whole ordeal, made me realize that there was a big connection to food and health. Well, the story goes on very positively, and as a result, I became a vegetarian, and consequently, vegan. At 8, my son became a vegetarian (his own decision). I became very active as a vegan for The North American Vegetarian Society (which is a vegan group) and began to attend their summer conferences on the East Coast on different college campuses each year. This was back in 1982 and since then I have volunteered for this organization. I became a member of the Board of Trustees since the mid-1980’s. In the process, I have given many cooking classes, talks, and have worked in assisting chefs a t the Summerfest. I have also studied macrobiotics and have served as a scribe for many macrobiotic counselors as well as an assistant in the kitchens. Most recently, I have studied at the Living Light Culinary Arts Institute in FT. Bragg, CA and have also received certification by Ekaya Institute of Living Food Education (through The Raw Vegan Network) as a Certified Raw Chef, Raw Nutrition Specialist, Raw Food coach, and a Raw Personal Trainer. I have been eating primarily raw for about 3 years now and have recently started a small catering service in my community called “Rawing” to Go. I also give raw foods classes and consultations. I enjoy working with people and supporting them in their own raw journeys.

FAVORITE RECIPES

Japanese Cucumber Salad
Dressing-- 1/4 cup minus 1TBL of Nama Shoyu or tamari
1/8 cup sesame oil
1 ½ tsp sesame seeds (black, white or combination)
1/4 cup water
1/8 tsp red pepper flakes
1 clove garlic, minced
1 tsp ginger root, minced
½ green onion, minced
Juice squeezed from one of the cucumbers below
Salad-- 2 large organic cucumbers
(Placed in Spiralizer and made into angel hair pasta)
2 stalks celery (thin angled slices)
4 stalks asparagus (cut very thin into lengthwise slices)
¼-1/2 red pepper julienne slices
1 carrot (thin julienne slices)
1 green onion (thin angled slices)
½ package Sea Tangle Mixed Sea Vegetables or 2 TBL each arame, hiziki, kelp (if using the Sea Tangle, soak for a few minutes and rinse 3-4 x to rinse off the excess salt)
Cut cukes in ½ or in thirds depending on length and place in a Spiralizer, to make into angel hair pasta. Squeeze out cucumber juice and place in a separate bowl to mix for dressing. Mix with cucumber pasta with either Sea Tangle seaweed or arame and hiziki. Arrange sliced asparagus on a square plate or make into a square shaped boarder on any plate. Mix cucumber-seaweed combo with red pepper, carrots, celery, and green onion.
For dressing, just mix together ingredients and shake in a jar. Can place in a squeeze bottle and mix with salad.

My Favorite Green Smoothie
1 banana
4-5-strawberries
½ mango, peeled
6-7 leaves of dino or regular kale, or a bunch of parsley or a large bunch of spinach, chopped
Place soft fruit on bottom, then banana, then chopped greens. Blend in any blender.

Chef Ed’s Heirloom Salad
2 Tbs chopped fresh herbs: basil, rosemary, thyme
3 cloves garlic, chopped
2 cups diced heirloom tomatoes
1 cup baby greens (washed and cleaned)
4 thinly sliced crimini mushrooms
2 Tbs good extra virgin olive oil Raw Oil
Juice of one lemon
Salt and pepper to taste or (raw seasoning to follow guidelines)
Blend all ingredients together except greens let sit at room for one hour. Then serve over
