**Starting in February 2008 the Raw Vegan Network online raw food certifications will be offered at $349 US. This is the first price increase since September 2004. IN THE GARDEN

 

-If you live where driveways and walkways are likely to freeze, make sure you have a de-icer. Choose a de-icer that is calcium-chloride based to avoid salt damage to your car. You can also use sand or kitty litter.

 

-It’s a great time to start thinking about the plants you will need for the spring. It’s not too soon to begin to plot out your spring and summer vegetable and flower gardens.

 

-Coriander is better known as cilantro. Historically called “the healer from heaven”, it has been used for centuries to treat minor digestive ailments, including digestion, flatulence and diarrhea. It has also been applied topically to ease muscle and joint pain. Research has shown that it may function as an anti-inflammatory suitable for treating arthritis, and as a blood-sugar agent useful in managing diabetes.

FOOD FOR THOUGHT

 

***One of the best things you can have for breakfast or a mid-afternoon mini-meal is a smoothie made from raw foods that are good for you, and not as fattening as many breakfast and snack foods.

 

A fruit smoothie is easy to make. In a blender put your favorite fruits such as oranges, berries, peaches, pears and bananas and blend until smooth. If you are using fruit you have frozen earlier in the year when it was in season, defrost at room temperature or add a little frozen to your fresh fruit for a thicker consistency. Add greens such as fresh spinach for added nutrients and healthful benefits (you won’t taste the greens and this is a great way to get more greens into your kids or a finicky eater). 

 

 

***Garlic, onions and leeks—all technically of the lily family—have been used in food preparing and medicine for thousands of years.

 

In ancient times, onions were considered a food that increased energy and endurance. Slaves, such as the Israelites in Egypt, were fed diets rich in onions to keep them strong for hard manual labor. Onions have been used externally as an antiseptic and pain reliever, and have been taken internally as a tonic to ease intestinal gas pains and alleviate symptoms of hypertension, high blood sugar and high cholesterol. Through the centuries, onions have been used to treat kidney and bladder problems. Modern herbalists believe onions to be a good expectorant and excellent diuretic. George Washington was quoted as saying that he ate hot roasted onion if he had a cold.  Onions have antibiotic properties that are effective against a variety of bacteria, fungi and parasites. Onions are high in vitamins, especially B1, B2 and C. They have more than 150 chemicals, some which seem to cleanse the blood and detoxify the liver and block tumor growth.

 

Leeks are a milder, sweeter version of the onion. They have a more delicate flavor than the garlic or onions. Leeks have been prescribed in quantity for infertility, obesity, kidney complaints, coughs and intestinal disorders.

STRIKING A NEW BALANCE

 

For many people, the pursuit of greater health and wholeness means striking a new balance in their lives, as opposed to giving up something entirely, adding a brand new discipline, or making radical changes. Consider the benefits of seeking these shifts in balance: eat more raw fruits and vegetables and less cooked foods; add more activity and less sitting idly; more praise and less whining and complaining; more involvement with others and less isolation; more time reading and less time watching TV; more quiet time in a calm environment and less time in traffic; more intentional use of recourses and less waste and pollution; more forgiveness and less pent-up anger, sorrow, resentment, hatred and bitterness; more expression of love and less conflict and estrangement; more words of encouragement and less criticism, argument, debate and strife; more good and less evil.

I've been an LPN for 42 years. Caring for others and not myself was catching up to me.  I needed to make some changes.  About 9 years ago I learned about raw food from my massage therapy instructor.  He has been on the board of CHI, Creative Health Institute, in Michigan and encouraged me to visit them. My interest was piqued and I ordered the home program.  When I was able to get away, I attended their two week detox and hands-on food preparation course.  I also found Victoria Boutenko from the CHI link online and have been a fan from day 1.  With my background in healthcare, her research and presentation rang true to me.  I decided to take her 2 week challenge to be raw.  My energy level doubled in those two weeks, I noticed I wasn't stiff anymore, and my GERD was gone. Wow!  I was sold.  It took some time for transitioning. but 4 years ago I decided make the leap to 100% raw and I haven't looked back. 

 

Since then, I have hosted a presentation featuring Victoria and Igor Boutenko in my home town.  It was a wonderful success.  From that, a monthly food buying coop was formed in our community and I am now doing raw lifestyle coaching.  I do alot of one-on-one coaching.  Occasionally I will have couples in my home or travel to give presentations to groups of people.  This has all been through word of mouth.  I'm excited now to join the Raw Vegan Network to expand my boundaries in sharing raw food with my community as well as extended community. 

 

I believe in the importance of staying connected to like-minded people and look forward to keeping in touch with the raw vegan community through www.therawvegannetwork.com.

FAVORITE RECIPES

Hummus

1/2 c Garbanzo Beans (soak overnight and sprout 24-48 hours until the tails are about the length of the bean)

Put in blender with:

1/3 c Lemon Juice

1/4 c Tahini

2 cloves garlic

1 tsp Salt

1/2 tsp Onion Powder

1 tsp Cumin, or to taste (optional)

1/4 to 1/2 c Water

Blend until Smooth & Creamy - Enjoy!

 

Very Versatile Vinagairette

5 oz Olive Oil

2 oz Raw Apple Cider Vinegar or Lemon Juice

1 oz Water

Add to this any of the following to change the flavor:

1/4 Vidalia Onion

1/2 Avocado

1/4 c Raspberries

Experiment to find other flavors!!
